Tasty Chips

Ingredients

  • 1 cup rice
  • 1/4 cup toor dal (pigeon peas)
  • 1 cup mixed vegetables (carrot, beans, potato, etc.), chopped
  • 1 medium onion, chopped
  • 1 tomato, chopped
  • 1-2 tbsp sambar powder (adjust to taste)
  • 1/4 tsp turmeric powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp urad dal (black gram split)
  • 1-2 dried red chilies (optional)
  • 1 sprig curry leaves
  • 2 tbsp oil
  • Salt to taste
  • 2 1/2 cups water (adjust as needed)

Instructions

  • Rinse the rice and toor dal together under cold water until the water runs clear. Drain and set aside.
  • Heat oil in a large pot over medium heat. Add mustard seeds, cumin seeds, urad dal, and dried red chilies. Sauté until the mustard seeds start to pop and the urad dal turns golden brown.
  • Add the chopped onion and curry leaves. Sauté until the onion becomes translucent
  • Add the chopped tomato and cook until it softens.
  • Stir in the sambar powder and turmeric powder. Cook for a minute until the spices are fragrant.
  • Add the chopped mixed vegetables and sauté for a few minutes.
  • Add the rice and toor dal mixture to the pot. Stir well to combine with the spices and vegetables
  • Pour in the water and add salt to taste. Stir everything together.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and cook for about 20-25 minutes, or until the rice and dal are tender and the water is absorbed.
  • Remove from heat and let it sit for 5 minutes before fluffing with a fork.
