Instant pickles with MM Masala

Instant Pickles & Podi Parathas Recipe

Ingredients for Instant Pickles

  • Choice of vegetables (carrot, gooseberries, radish, lemons, raw mango)
  • Oil (mustard oil, sunflower oil, or cold-pressed oil) - 5 tbsp
  • MM Magic Podi - 5 tbsp (adjust to desired consistency)

Seasoning Ingredients

  • Mustard Seeds
  • Cumin
  • Asafoetida
  • Turmeric
  • Coriander Leaves
  • MM Magic Masala
  • Salt - As per taste

Cooking Time: 15 minutes

Storage: Up to 15 days if refrigerated

Instant Pickles

  1. Wash your choice of vegetables thoroughly and chop them into desired sizes. Set aside. You can also make a mixed vegetable pickle.
  2. In a pan, add 5 tablespoons of your chosen oil (mustard oil, sunflower oil, or cold-pressed oil).
  3. Add the seasoning ingredients: mustard seeds, cumin, asafoetida, and allow them to splutter.
  4. Add 5 tablespoons of MM Magic Podi (adjust to your desired consistency) and cook for 2 minutes, stirring continuously.
  5. Add the chopped vegetables and cook until the veggies are tender but still retain some crunch.
  6. Turn off the heat and let the pickle cool down completely.
  7. Transfer to a clean, dry container and serve with hot rice, paratha, dosa, or uthappam.

Storage Note:

These pickles can be stored for up to 15 days if refrigerated in an airtight container.

Podi Parathas

Adding a variety of spices to any meal can enhance the taste of food. Adding podis to your paratha makes for a surprisingly tasty and delicious meal anytime.

  1. Prepare your regular paratha dough as you normally would.
  2. Take a small portion of the dough and flatten it slightly.
  3. Sprinkle a generous amount of MM Magic Podi and seasoning ingredients (mustard seeds, cumin, asafoetida, turmeric, coriander leaves) on the flattened dough.
  4. Cook on a hot tawa with a little oil until both sides are golden brown and crispy.Serve hot with yogurt, pickle, or any curry of your choice.
