Instant pickles with MM Masala

Vegetable Podi Pickle is a tangy and flavorful dish made with fresh vegetables like carrots, radish, gooseberries, and raw mango, seasoned with mustard seeds, cumin, turmeric, and MM Magic Masala. Sautéed in oil and served with hot rice, paratha, or dosa, it’s a perfect accompaniment.

Ingredients

  • Choice of vegetables (carrot, gooseberries, radish, lemons, raw mango)

Preparation

Instant Pickles

  • Wash your choice of vegetables, chop, and set aside. You can also make a mixed vegetable pickle.
  • For the seasoning, choose any oil – mustard oil, sunflower oil, or cold-pressed oil.
  • In a pan, add 5 tbsp of your chosen oil and add the seasoning ingredients.
  • Add 5 tbsp of MM Magic Podi (adjust to desired consistency) and cook for 2 minutes.
  • Add the chopped vegetables and cook until the veggies are tender. Turn off the heat and let the pickle cool down. Transfer to a container and serve with hot rice, paratha, dosa, or uthappam.
  • These pickles can be stored for up to 15 days if refrigerated.
