For Instant Pickles:
- Choice of vegetables (carrot, gooseberries, radish, lemons, raw mango)
Preparation
Instant Pickles
- Wash your choice of vegetables, chop, and set aside. You can also make a mixed vegetable pickle.
- For the seasoning, choose any oil – mustard oil, sunflower oil, or cold-pressed oil.
- In a pan, add 5 tbsp of your chosen oil and add the seasoning ingredients.
- Add 5 tbsp of MM Magic Podi (adjust to desired consistency) and cook for 2 minutes.
- Add the chopped vegetables and cook until the veggies are tender. Turn off the heat and let the pickle cool down. Transfer to a container and serve with hot rice, paratha, dosa, or uthappam.
- These pickles can be stored for up to 15 days if refrigerated.

- Asafoetida

- Coriander Leaves
